Spread across five live kitchens to justify the extensive reach Indian gastronomy covers, Spice Market encompasses the Tandoor Kitchen (Kebabs, grills, Indian breads), Stove Kitchen (Gravy based recipes, Indian rice delicacies etc.), Chaat Kitchen, Beverage Island and the Dessert Island (hot and cold desserts). Distinctively Indian, the food here promises to capture the flavour and aroma befitting the traditional Indian kitchens spread across the country. Spice Market pays homage to the legendary Indian home and street food.

Spice Market has been designed in line with Hyatt’s contemporary food aesthetics interspersed with quirky and eccentric art which reflects Chennai in all its fascinating glory. As the Executive Chef at Hyatt Regency Chennai, Chef Tom is responsible for creating and conceptualising the three key speciality restaurants, the Lobby Lounge, bar and the Gourmet Deli. This young and accomplished Chef not only brings a rich repertoire of a global culinary understanding with him but an intuition to adapt it to local sensibilities. This has been key to the foundation on which Spice Market, Focaccia and Stix rest.
